Pumpkin coffee bundt cake

Llegamos al mes de octubre con el reto#BundtBakers. El tema de este mes, las bebidas. Cuando viene el otoño y pienso una bebida, siempre me acuerdo de mi primer café de calabaza que tomé en Londres hace ya 3 años en Starbucks. Lo pedí por curiosidad, ¿a que debe de saber eso? Cuando lo probé me enamoré de él. Por suerte, ahora en España también lo podemos pedir, y para mi ya forma parte de un ritual otoñal.

Por eso, me he inspirado en él para inventar este bundt cake espaciado de calabaza y café.

Se han horneado unos Bundt Cakes geniales, que podéis ver en el grupo de Pinterest o en el grupo Bundt Bakers.




We arrive at october with the challenge  #BundtBakers. The theme of this month, are the beverages. When the fall arrives I think about that coffee with pumpkin that I tasted 3 years ago in London in Starbucks. I ordered, because I had curiosity about the taste ¿ How did it taste?. When I drank I falled in love with it. Luckly, now we get it in Spain as well, and for me it is like a falling ritual.

Ingredientes para el bundt:

  • 500 grs de harina
  • 4 cdtas de levadura
  • 1 cdta de bicarbonato sódico
  • 1/4 cdta de sal
  • 1 cda de jengibre
  • 2 cdtas de canela
  • 1 cdta de nuez moscada
  • 250 grs de mantequilla
  • 4 huevos
  • 250 grs de azúcar moreno
  • 300 grs de puré de calabaza
  • 200 grs de leche entera
  • 2 sobres de café soluble 

Ingredients for the bundt:

  • 500 gr flour
  • 4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ginger
  • 2 teaspoons cinnamon 
  • 1 teaspoon nutmeg
  • 250 g butter
  • 4 eggs
  • 250 brown sugar
  • 300 g mashed pumpkin 
  • 200 gr whole milk
  • 2 packets solvable coffee

Preparación bundt:

Antes de todo, debemos tener un puré de calabaza preparado, podeis comprarlo en lata como en esta receta , o podeis asar la calabaza en el horno como yo hago a unos 200ºC una hora más o menos.




Precalentamos el horno a 180ºC. Engrasamos nuestro molde de bundt cake, mejor con un spray. Yo he usado mi  molde "Kugelhopf"para hacer este bundt.

En un bol, tamizamos harina, la levadura, el bicarbonato, la sal y todas las especies. Reservamos.

Batimos la mantequilla con el azúcar moreno y los huevos hasta que estén integrados. Echamos el puré de calabaza y batimos de nuevo. En un bol o vaso, mezclamos la leche templada con el café soluble y reservamos. Vamos incorporando a la mezcla una vez la mezcla de harina y otra la leche con el café unas tres veces acabando con el harina.

Repartimos la masa en el molde que no sobrepase a los 2/3 y horneamos entre 45-50 minutos o hasta que al meter un palillo de madera este salga limpio. Dejamos que se enfríe en el molde y luego desmoldamos obre una rejilla de metal.

Directions for the bunt:

First af all, we must have a mashed pumpkin least, you can buy it in a can like the recipe, or you can oven a pumpkin 200ºC more or les an hour, that´s what I do.

Preheat the oven to 180º C / 350º F / gas 4. Grease our bundt pan, better with a non-stick spray.  I used my  pan "Kugelhopf" for this bundt.

In a bowl, stire the flour,  baking powder, baking soda, salt and all the species. Reserve.

Cream the butter with the brown, and add the eggs one by one, until all is mixed. Ad the mashed pumpkin and cream again. In a bowl or glass, mix warm milk with the coffee and reserve. We continue adding in the mixing the flour and the milk, at least three times finishing with the flour.

Pour the batter in the pan only 2/3 and oven for about 45-50 minutes or until a skewer inserted into the center of the bundt comes out clean. Let cool in the pan and then turn out on a wire rack.


Ingredientes para el glaseado:

  • nata para montar
  • azúcar glacé
  • canela

Ingredients for the glaze:

  •  heavy cream
  • icing sugar
  • cinnamon 

Preparación del glaseado:

Echamos en un bol pequeño, el azúcar y vamos añadiendo poco a poco nata hasta que veamos una mezcla parecida al pegamento.  Echamos este glaseado por encima del bundt cake y espolvoreamos con la canela para acabar.

Put the icing sugar in a little bowl, and add little by little the heavy cream  until its becomes  a thick liquid like glue. Pour the glaze on the bundt cake and sprinkle with the cinnamon to finish.

Pretzels Crown in a S´more Bundt Cake


Me ha encantado el reto de #BundtBakers este mes. Se trataba de hacer un bundt inspirado en un postre tradicional de Estados Unidos y Canadá, que se consume habitualmente en las fogatas nocturnas como la de los Boy o Girls Scouts, y que consiste en un malavavisco (nubes) tostado y una capa de chocolate entre dos trozos de galletas Graham.

I love the #BundtBakers challenge of this month. It was about a bundt inspirited in a  dessert of USA and Canada, is a traditional nighttime campfire treat popular, consisted in a roasted marshmallow and a layer of chocolate sandwiched between two pieces of Graham crackers.

Hemos hecho un Bundt Cake super chocolateado, relleno de galletas Graham, pero en este caso como no las encontré compré una base de pie Graham y la desmigué. Por encima hemos echado un merengue suizo que luego hemos tostado con un soplete y una corona de pretzels saladitos.

We cooked a super chocolaty, filled of Graham crackers, but in this case I didm´t find them so I bought a Graham pie for fill and I crumble it. I made a swiss meringue to toss all over the bundt, and then we toast it with a blowtorch and a salty pretzels crown.

Ingredientes para el bundt:

    • 180 ml de aceite de oliva suave
    • 500 grs de azúcar
    • 300 grs de harina
    • 4 huevos
    • 300 ml de leche
    • 100 grs de perlas de chocolate
    • 2 cdtas de vainilla en pasta
    • 300 ml de agua hirviendo
    • 100 grs de cacao en polvo
    • 4 cdtas de levadura
    • galletas graham machacadas o una base de galletas para pie de galletas graham

    Ingredients for the bundt:

      • 180 ml soft olive oil
        • 500g sugar
          • 300g flour
            • 4 eggs
              • 300 ml whole milk
                • 100 g choco chips
                  • 2 teaspooo vanilla paste
                    • 300 ml boiling water
                      • 100g cocoa powder
                      • 4 teaspons baking powder
                      • graham crackers


                      Preparación bundt:

                      Precalentamos el horno a 180ºC. Engrasamos nuestro molde de bundt cake, mejor con un spray. Yo he usado mi nuevo molde "Kugelhopf"para hacer este bundt.

                      En un bol, tamizamos harina cacao y levadura. Reservamos.

                      Batimos aceite, azúcar y los huevos hasta que estén integrados. Incorporamos la harina y el cacao. Cuando la mezcla sea homogénea, añadimos la leche y la vainilla. Agregamos el agua hirviendo y batimos de nuevo. Echamos los chips de chocolate y por ultimo las galletas Graham. La masa va a quedar muy líquida, y es más, nos sobrará un poco que podremos usar para hacer por ejemplo, cupcakes.

                      Repartimos la masa en el molde que no sobrepase a los 2/3 y horneamos entre 50-55 minutos o hasta que al meter un palillo de madera este salga limpio. Dejamos que se enfríe en el molde y luego desmoldamos obre una rejilla de metal.


                      Directions for the bunt:

                      Preheat the oven to 180º C / 350º F / gas 4. Grease our bundt pan, better with a non-stick spray.  I used my new pan "Kugelhopf" for this bundt.

                      In a bowl, stire the flour, cocoa powder and the baking powder. Reserve.

                      Cream the olive oil with the sugar and the eggs, until all is mixed. Add the flour with the cocoa. When the batter will be homogeny, add the milk ant the vanilla paste. Add the boiling water and continue creaming. Toss the choco chips and the Graham crackers. The batter will be pretty liquid, and moreover,  will remain a little to make for example, cupcakes.

                      Pour the batter in the pan only 2/3 and oven for about 50-55 minutes or until a skewer inserted into the center of the bundt comes out clean. Let cool in the pan and then turn out on a wire rack.




                      Ingredientes para el merengue suizo:

                        • 3 claras de huevo
                        • 350 grs de azúcar
                        • 125 ml de agua
                        • 1 y 1/2 cda de glucosa (Karo)
                        • 1/8 cdta de sal
                        • 1 y 1/2 de esencia de vainilla

                        Ingredients for the swiss meringue:

                        • 3 egg whites 
                        • 350 g sugar
                        • 125 ml water
                        • 1 and 1/2 tablespoon Karo
                        • 1/8 teaspoon salt
                        • 1 and 1/2 vanilla essence

                        Preparación del merengue suizo:

                        Poner en un bol las claras, el azúcar, el agua, la sal y el sirope Karo.

                        Colocar el bo al baño maría y mezclar hasta que se disuelvan los granos de azúcar.

                        Retirar del fuego y seguir batiendo en la batidora a una velocidad alta, durante unos 10 minutos. Echar la esencia de vainilla.

                        Directions for the swiss meringue:

                        In a bowl bain-marie, put the egg whites, sugar, water, salt and Karo.

                        Mix all until the sugar is dissolve completely.

                        Remove the bowl and place it in a bowl mixer, mixing in a high velocity during almost 10 minutes. Incorporate the vanilla essence.

                        Decoración del bundt:

                        Necesitaremos una manga pastelera, un soplete y unos pretzels pequeños de los saladitos. Echamos en la manga pastelera el merengue y lo colocamos de forma vertical sobre nuestro bundt. Colocamos encima de todo los pretzels como si fueran una corona, y para rematar, quemamos con un soplete el merengue.

                        To decorate the bundt:

                        We need a pastry bag, a blowtorch and a little salty pretzels. Put the meringue in the pastry bag and add it in a vertical way on our bundt. Put over all the pretzels like a crown, and to finish, burn wit the blowtorch the meringue.











                        Como he dicho antes, me sobró un poco de masa, así que hice unos mini cupcakes muy monos.

                        Pastel de ruibarbo y polenta.


                        Pastel de ruibarbo y polenta

                        ¿Os acordáis del ruibarbo que me traje de Estocolmo?. Pues ese ruibarbo lo congelé por que tenía varias ideas en la cabeza, pero en realidad tenía una muy clara que vi en la revista "Jamie, nº 56". 

                        Había una receta que me llamó mucho la atención por que yo nunca había utilizado la polenta para hacer un pastel y me apetecía mucho mezclar ambos ingredientes. El resultado, espectacular, creedme. Creo que volveré ha hacerlo utilizando otras frutas por que es la mar de sencillo.


                        Do you remember when I bought rhubarb from Stockholm?. So I froze This rhubarb, because I had several ideas in my head, but actually , I had an clearly idea since I saw in "Jamie, issue 56" magazine.

                        There was a recipe that bring me up because I never used the polenta, to make a cake, and I wanted to mix both ingredients. The result, was espectacular, really. I think I will return to make it using other kinds of fruits because it´s very simple.


                        Ingredientes 8 personas:

                        • 400 grs de ruibarbo cortado en trozos de 4 cm
                        • 150 grs dde azúcar, más 1 cda extra
                        • 150 grs de almendra molida
                        • 100 grs de polenta rápida
                        • 50 grs de harina
                        • 1 cdta de levadura
                        • 150 grs de yogurt griego
                        • 4 huevos batidos
                        • ralladura y zumo de un limón
                        Precalentamos el horno a 180ºC. 

                        Engrasamos un molde redondo de 20 cm. Echamos el ruibarbo cortado con la cucharada de azúcar en una bandeja y dejamos cocer durante unos 15 minutos, hasta que esté tierno.

                        En un bol, mezclamos las almendras molidas, la polenta, la harina, la levadura, el resto del azúcar, luego incorporar el yogurt, los huevos batidos, la ralladura de limón y el zumo. Colocar la mitad del ruibarbo en la base del molde, echar la mezcla de la polenta, y por encima el resto del ruibarbo. Hornear durante 45 minutos, o hasta que al introducir un palillo este salga limpio.

                        Sacar el pastel del molde y dejar enfriar en una rejilla antes de servir.


                        Truco: podemos substituir el limón por la naranja.


                        Ingredientes for 8 serves:


                        • 400 g rhubarb, chopped into 4 cm pieces
                        • 150 sugar, plus 1 tbsp extra
                        • 150 ground almonds
                        • 100 quick-cook polenta
                        • 50 g plain flour
                        • 1 tsp baking powder
                        • 150 g greek yoghurt
                        • 4 eggs, beaten 
                        • Zest and juice of 1 lemon
                        Preheat the oven to 180ºC/ gas 4. Line a 20cm cake tin. Toss the chopped rhubarb in the tablespoon of sugar and bake on a tray for 15 minutes, until tender. In a bowl, combine the almonds, polenta, flour and baking powder and the rest of the sugar then stir in the yoghurt, eggs and lemon zest and juice, Spoon  half of the rhubarb into the bottom tin, spoon over the batter, then  the rest of the rhubarb. Bake for 45 minutes, or until a skewer inserted into the centre comes out clean.

                        Remove from the tin straight away and cool on a wire rack before serving.

                        Tip: Try making this with orange in a place of lemon.

                        Ya estamos aquí de nuevo, con el reto #BundtBakers. El tema de este mes son los limones. Creo que es un tema perfecto para este mes, ya que estamos muy cerca del verano, y a mi el limón, me lleva hasta esta estación.

                        Me apetecía hacer algo purista, sólo limón, no quería quitarle el protagonismo con ningún otro ingrediente, quería que el limón brillara en esta receta. Tanto  en el bizcocho, como el glaseado, como en la decoración, el limón está presente.

                        Se han horneado unos Bundt Cakes geniales, que podéis ver en el grupo de Pinterest o en el grupo Bundt Bakers.


                        Here we are again, with the #BundtBakers challenge. The theme  this month  are lemons. I think it is a perfect theme for this month, because we are nearly of summer, and for me the lemon, takes me to this season.

                        I felt like doing something purist, just lemon, I didn´t want to take  prominence with other ingredient, I wanted lemon shining in that recipe. As much to the cake as the glaze, as the decoration, the lemon is present.

                      • Ingredientes para el bundt:

                        • 230 grs de mantequilla
                        • 360 grs de harina
                        • 1 pizca de sal
                        • 1/2 cdta de bicarbonato sódico
                        • la ralladura de 2 limones
                        • 500 de azúcar
                        • 5 huevos grandes
                        • 2 cdta de vainilla
                        • 250 grs de crema agria 

                        Ingredientes para los limones confitados:

                        • 1 limón pequeño
                        • 175 grs de agua
                        • 140 grs de azúcar

                        Ingredientes para el glaseado:

                        • 100 grs de azúcar glass
                        • almíbar de los limones confitados
                        • azúcar amarillo para decorar

                        Ingredients for the bundt:

                        • 230 g butter
                        • 360 plain flour
                        • 1 pinch of salt
                        • 1/2 teaspoon bicarbonate of soda
                        • grated zest of 2 lemons
                        • 500 g sugar
                        • 1 teaspoon vanilla extract
                        • 250 g sour cream

                        Ingredients for the candied lemon:

                        • 1 little lemon
                        • 175g water
                        • 140g sugar

                        Ingredients for the glaze:

                        • 100 g icing sugar
                        • syrup of the candied lemon
                        • yellow sugar to decorate


                        Vamos a preparar los limones confitados con antelación, así ya los tendremos listos para decorar. La receta la he sacado del blog de Biljana Mis Dulces Joyas. Los he partido por la mitad, y me han quedado un pelín menos caramelizados, para mantener el color amarillo del limón.

                        Beforehand, we are going to make the candied lemons, so we will have them ready to decorate. I took the recipe from Biljana  Mis Dulces Joyas blog. I divided them halfway, and were, just a little beat, less candied, because I wanted to keep the yellow colour of themselves.



                        Antes de preparar el bundt, os voy a enseñar como hacer crema agria casera. La crema agria le proporciona al bizcocho una textura húmeda y esponjosa. La receta la encontré en el blog de I love Bundt Cakes, y es muy sencilla de hacer.

                        Before prepare the bundt, I am going to show you how make the home made sour cream. The sour cream, gives a moist and fluffy texture to the cake. I found the recipe in I love Bundt Cakes blog, is so simple to make it.

                        Preparación del bundt:


                        Precalentamos el horno a 180ºC. Engrasamos el molde con spray anthiaderente.

                        Batimos la mantequilla junto el azúcar, hasta que la mezcla tenga un color más pálido y una textura esponjosa.

                        Añadimos los huevos uno a uno, y batimos bien después de cada uno que echamos. Incorporamos la vainilla.

                        En un bol, tamizamos el harina con la sal , el bicarbonato y la ralladura del limón.

                        Añadimos a la mezcla de mantequillas y huevos, la mezcla de harina en tandas combinandola con la crema agria, y batimos hasta que todo esté bien integrado.

                        Echamos la masa en el molde y horneamos durante unos 50 minutos o hasta que al introducir un palo en el centro, salga limpio. Sacamos del horno y dejamos enfriar en el molde, luego lo sacamos y se acaba de enfriar sobre una rejilla.


                        Directions for the bundt:

                        Preheat the oven to 180ºC/ 350ºF/ gas 4. Grease our bundt pan, better with a non-stick spray.

                        Cream the butter and sugar , until the mixture is pale and smooth.

                        Add the eggs, one at a time, and beat well after each one. Add de vanilla extract.

                        Sift the flour, bicarbonate of soda, the salt, and the grated zest in a bowl.

                        Add to the butter and eggs mixture, the mix of the flour combined it with the sour cream, and beat until all is evenly blended.

                        Pour the mixture in the bundt pan, and bake about 50 minutes or if a skewer inserted into the center of the pan comes out clean. Let the bundt cool in its pan, and then turn it out onto a wire racks to cool completely.


                        Preparación del glaseado:

                        Echamos en un bol pequeño, el azúcar y vamos añadiendo poco a poco el almíbar sobrante de los limones caramelizados. Echamos hasta que nos quede un líquido espeso.

                        Echamos el glaseado por todo el bundt, colocamos encima el azúcar amarillo, y acabamos decorando con los limones caramelizados.

                        Directions for the glaze:

                        Put the icing sugar in a little bowl, and add little by little the surplus lemon candied syrup. Add until its becomes  a thick liquid.

                        Put the claze all over the bundt, laying over the yellow sugar, and finish garnishing with the candied lemons.

                        Mascarpone & Strawberries Swiss Roll

                        Mascarpone and strawberry swiss roll


                        Y volvemos otro mes con el "Reto Cocinillas" de Lorraine Pascale. Este mes tocaba reto dulce. Entre varias recetas propuestas por los participantes, fue el brazo de gitano de mascarpone y fresas el claro ganador.

                        Voy a decirlo, yo también lo voté, y es que tenía una pinta estupenda, y...¡ quería comérmelo!

                        Además, ya tengo experiencia con este tipo de recetas, ¿os acordáis de mi Bunny Swiss Roll?, para los fans de lo kawaii.

                        Esta receta es muy sencilla, se puede preparar en un plis, y  encima está deliciosa. Además, que mejor forma de aprovechar unas fresas ahora que aún tenemos.

                        Ingredientes para el relleno de fresas:

                        • 250 grs de fresas y un poco más para decorar.
                        • 2 cdas de azúcar granulada
                        • unas gotas de Marsala o zumo de naranja
                        Primero prepararemos el relleno por que necesita que macere al menos 30 minutos antes de hacer la receta, cuanto más tiempo esté, el sabor será mejor.

                        En un procesador metemos una tercera parte de las fresas con el azúcar y picamos todo. El resto de la fresas las cortamos en rodajas. Colocamos en un bol el puré de fresas, con el resto y unas gotas del zumo de naranja o el Marsala. Tapamos el bol con papel film y dejamos macerar en la nevera.

                        Ingredientes para el bizcocho:

                        • 3 huevos M
                        • 80 grs de azúcar en polvo y un poco más para espolvorear
                        • 1/2 vaina de vainilla o 2 gotas de extracto de vainilla
                        • 1 cda de agua tibia
                        • 80 grs de harina
                        • un pellizco de sal
                        Precalentamos el horno a 190ºC

                        Ponemos un papel de horno, en una bandeja especial para planchas de unos 23x33 cm. 

                        Batimos los huevos con el azúcar y la vainilla, hasta que la masa se quede pálida y sea muy esponjosa. Añadimos el agua, esto hará que no se agriete al enrollar el swiss roll. Tamizamos el harina con la pizca de sal y la añadimos de golpe a los huevos, sin sobre amasar por que podría perder  aire.

                        Echamos la masa en la bandeja y la nivelamos con una espátula para que se hornee bien por todos los lados. Dejamos cocer entre 10-15minutos o hasta que el bizcocho se haya reducido un poco y esté flexible al tacto.

                        Ponemos un papel de hornear en la encimera con azúcar en polvo. Giramos el bizcocho sobre este papel, y retiramos el papel que tiene en la superficie. Yo aquí, y aún caliente lo enrollo para que el bizcocho coja memoria y no se agriete al hacer el montaje ( no quería correr riesgos). Dejo enfriar unos 10 minutos, así enrollado.


                        Ingredientes para la crema de mascarpone:

                        • 250 grs de mascarpone
                        • media vaina de vainilla o 2 gotas de extracto de vainilla
                        • 2 cdas de azúcar en polvo
                        Batimos bien todos los ingredientes en un bol.

                        Montaje:

                        Desenrollamos el bizcocho y cortamos los laterales más feos. Ponemos una capa de la crema de mascarpone y encima el relleno de fresas.



                        Enrollamos el Swiss roll por la parte más corta, dejando la unión hacia abajo para que no se desmonte. Espolvoreamos con un poco de azúcar en polvo más y decoramos con unas rodajas de fresas.





                        Ahora me he aficionado a carvar mis propios sellos. Este ha sido el primero que he hecho, no es muy bonito, la verdad, pero es gracioso. Es una manera muy divertida de personalizar tus postres, y nunca mejor dicho: con sello propio.
